Matsumura spent 45 years crafting fine-dining menus that cost hundreds of dollars but has now turned to making luxurious ramen the everyday person can enjoy. Utilizing French techniques, specially developed soba noodles, and a rich flavored broth that takes 30 hours perfect, it’s no wonder people line up for hours each day to be in with a chance of eating this exclusive dish.
